Deep ruby red colour with blackish hues. An expressive nose full of full ripe red fruit and hints of tobacco and soft chocolate are followed by layers of caramel and sweet spices. In the mouth, it is full bodied, with structured tannins that are smooth and solid. Good integrated acidity and balanced flavor with a long finish. Will hold for at least 10 years.
After a double sorting at the winery, the grapes were dropped by gravity to the small tank where the primary fermentation was performed. A 5% saignée was taken on the first day. Cold maceration lasted for 6 days and alcoholic fermentation went on for 12 days at a temperature of 82,4ºF (28ºC). The wine was placed in 100% new Boutes/Taransaud French barrels where malolactic fermentation occurred naturally. Oak ageing 30 months.
Food Pairing Notes
Traditionally a wine to be had with red meat dishes, Krasia May lends its structure and elegance to a very versatile array of pairings, going well beyond the traditional barbecue settings. It will go well with sophisticated dishes such as duck confit, lamb tagine with prunes, and rabbit cacciatore. With roast beef or game - venison, boar or even partridge - it is almost magical.
